What you need:

Crust:

  • 1 1/2 cups whole wheat pastry flour (optional, white whole wheat flour)

  • 1/2 cup oat flour

  • 1 tablespoon turbinado or coconut sugar

  • 1/2 teaspoon salt

  • 2/3 cup coconut oil, cold (optional, pure unsalted butter)

  • Ice cold water

Filling:

  • 3 pounds Granny Smith or Golden Delicious Apples, or combination, cored, and thinly sliced

  • 1/2 cup coconut palm sugar, (optional other unrefined sugar)

  • 2 tablespoons white whole wheat flour

  • Juice of one lemon

  • 1 teaspoon cinnamon

  • 1/2 teaspoon ground cardamom

  • 1/2 teaspoon ground ginger

  • Pinch ground nutmeg

  • Pinch Kosher or sea salt

  • 2 teaspoons pure vanilla extract

  • 1 egg, lightly beaten

Apple Pie

Apple pie is probably one of my BIGGEST weaknesses, the crust and apple filling combination is just melt in your mouth amazing! So when I can find a cleaner recipe to make I am all over that!
