What you need:
Crust:

1 1/2 cups whole wheat pastry flour (optional, white whole wheat flour)

1/2 cup oat flour

1 tablespoon turbinado or coconut sugar

1/2 teaspoon salt
-
2/3 cup coconut oil, cold (optional, pure unsalted butter)

Ice cold water
Filling:
-
3 pounds Granny Smith or Golden Delicious Apples, or combination, cored, and thinly sliced
-
1/2 cup coconut palm sugar, (optional other unrefined sugar)
-
2 tablespoons white whole wheat flour
-
Juice of one lemon
-
1 teaspoon cinnamon
-
1/2 teaspoon ground cardamom
-
1/2 teaspoon ground ginger
-
Pinch ground nutmeg
-
Pinch Kosher or sea salt
-
2 teaspoons pure vanilla extract
-
1 egg, lightly beaten

Apple Pie
Apple pie is probably one of my BIGGEST weaknesses, the crust and apple filling combination is just melt in your mouth amazing! So when I can find a cleaner recipe to make I am all over that!
