Space Saving Freezer Lasagna

Today was a busy day! I filled my truck FULL of garbage to take to the dump, did a little packing, and some meal prep for the coming week/month! December is going to be a very BUSY month I start P90X before the holidays start, Christmas and then we are moving provinces on the 27th of December ( I know I am crazy! Two days after Christmas! AND Jeff is working in the Yukon until December 20th so I am rocking this on my own for the most part! YAY ME!) ----So I wanted to do up some freezer meals that I can just pop in the oven or Crock Pot come closer to move day so we don't order in or eat out for like 2 weeks straight, while our house is packed! ---Paper plates and a crock pot meal for Christmas Dinner sounds like a family filled GOOD time to me :)

The house that we are currently living in right now the fridge has a very SMALL narrow freezer and if it was not for our deep freeze in the basement I would probably not meal prep freezer meals as much as I do! BUT it did get me thinking and forced me to get creative with my Freezer meals and how I prepare them so I can fit more into the freezer when I go freezer meal crazy! ....And let's get real here a FULL family sized lasagna can take up a lot of prime real estate! So I started freezing my meals "flat" and since I reeeeally love lasagna I had to come up with a solution...... "Space saving Freezer Lasagna" it was! It takes up very LITTLE space, is easy to put together for a quick meal AND it's a healthy meal with a low carb option to! WIN WIN!!

Check it out below! Keep in mind my measurements are not always exact as I am a chop it and chuck it in kinda girl, I add as much or as little as I want I don't follow recipes to a tee at all. Feel free to add or take out ingredients, the recipe below should make two family sized lasagnas depending on size of your pan. Mine was a 20 cm x 28 cm pan.

-Space Saver Freezer Lasagna-

What you need:

- Catelli Express Lasagna noodles (Or zucchini or eggplant for a low carb option) You won't need this until you are ready to make your meal.

- 2 cloves garlic, minced

- 1 onion finely, chopped

- 500g ricotta or cottage cheese (I like to use cottage cheese)

- 300 g spinach, chopped

- 1 zucchini, grated

- 1-2 carrots, grated

- 1/2 cup mushrooms, chopped

- 1/2 cup mozzarella, shredded

- 1-2 cups chicken, cooked shredded

- 910 ml Low sodium pasta sauce maybe more if you like it saucy (store bought or homemade works)

- Spices to taste: Salt, pepper, basil, parsley, thyme

How to make:

1. In a sauce pan, heat oil; cook garlic and onion until tender. Mix in ricotta or cottage cheese, spinach, zucchini, carrots, mushrooms, mozza, chicken and pasta sauce. Heat until the cheese melts.

2. Take it off the burner and let cool a bit.

3. Scoop into 2 freezer bags, get all the air out and freeze flat!

When you are ready to pull it for dinner, pull it out the in the morning and let defrost during the day and ensemble when your ready. ---If I am in a hurry to get dinner on I like to use the express noodles as I do not have to boil them I just pull them out of box and assemble my lasagna and top it with cheese. ----If you are using the low carb option slice your zucchini or eggplant lengthways to desired thickness and then assemble in this order: sauce, noodle, sauce, noodle etc I like to put a thin layer of sauce on the top before I top it with some fresh grated cheese.

Cover with tin foil and cook at 350 F for 45-50 minutes, remove foil and put on broil to crisp the top a bit, watch it as this step dose not take long! Let stand for 10 minute before serving!

Meal prep does not have to be the boring same old same old you can make just about anything into a freezer meal you just have to get a little creative in the steps that you take!
