Clean Pulled Pork

I have not always been a fan of pork but in the last little while I have been experimenting with different recipes that have pork in them and other night I decided to pull a Pork Roast that I had and give pulled pork a try for the second time (First time was a dry, burnt, gross disaster!! My slow cooker hated me that day!!)

BUT yesterdays pulled pork was a success!!! It had tons of flavor, it was moist and everyone loved it! With a few simple substitutes from the original recipe that I found it was cleaned up and made on the healthier side so it made for a nice guilt free meal, even the coleslaw was guilt free Click Here for my coleslaw recipe.
Honey Balsamic Pulled Pork (this recipe is based on a 3 lbs roast)
What you need:
1 Pork Shoulder Roast, Fat Trimmed
1/2 Cup Balsamic Vinegar
1 Cup Water
1/4 Cup Organic Honey (you can use less to cut calories a bit =) )
3 Tbsp Organic Coconut Palm Sugar
1 Tbsp Garlic, minced
1 Tsp Onion Powder
1/2 Tsp Black Pepper
2 Tbsp Coconut Aminos (A Healthier Soy Substitute)
Directions:
1. Whisk together vinegar, water, honey, coconut palm, garlic. onion powder, pepper and coconut aminos.
2. Add pork to your slow cooker and pour the sauce over top of your roast. Cover and cook on high for 4-5 hours or on low for about 8 hours (Times may vary)
3. In the final 30 minutes when roast is almost done it should shred nice and easily, shred it and let cook in the sauce for 30 minutes.
